Missoula's coffee roasters

An all-organic roaster on East Spruce, a crew that has roasted for Missoula since 1991, and cafes with their own bakeries.

Coffee in Missoula

Missoula coffee roasters have been at it since at least 1991, the year Hunter Bay started roasting in Missoula, and Black Coffee Roasting Company has roasted out of a Quonset hut on the Northside since 2014. Missoula had 78,903 residents in the Census estimate for July 1, 2025, and three of the independent roasters we write up roast in or just outside town. Roasters in and near Missoula

Black Coffee Roasting Company, East Spruce Street

Black Coffee sources only certified organic coffee and roasts it on a Loring, a machine built to burn far less fuel than a conventional roaster. Its cafe at the roastery, 525 E Spruce St, is open every morning.

Drum Coffee Roasting, East Broadway

Drum runs two Missoula cafes, and each has its own bakery turning out baked goods daily. Several of its house blends are organic, among them Viola, Max and Art.

Hunter Bay Coffee, Lolo and the Northside

Hunter Bay roasts a few miles south in Lolo and delivers fresh coffee to its Toole Ave Cafe on Missoula's Northside three times a week. It buys direct trade and certified organic coffees, and its roasters roast wholesale orders only after they are placed, in small batches using a slow European style. Its wholesale customers include restaurants, bakeries, offices, hotels and grocers in four states.

Missoula's coffee story

Black Coffee Roasting Company was started in the summer of 2010 by Matt McQuilkin and Jim Chapman. In 2014 it moved into a 5,000 square foot Quonset hut on the Northside, according to a profile in Fresh Cup magazine.

So the Northside holds two of the city's roasting stories: the Quonset hut and the Toole Avenue cafe.
