What is whole bean coffee?
Whole bean coffee is coffee sold roasted but not ground. You grind it yourself, just before you brew. It stays fresh longer than ground coffee: Wikipedia's Coffee roasting article says roasted whole beans can count as fresh for up to one month if kept cool, while ground coffee is best used right away.
Why whole beans keep longer
A whole bean exposes little of itself to the air. Grinding breaks it into many small pieces, and Wikipedia's Coffee preparation article says ground coffee deteriorates faster than beans because of the greater surface area exposed to oxygen. The same roasting article puts the optimal shelf life of roasted coffee at two weeks and of ground coffee at about 15 minutes.
The National Coffee Association (NCA) gives more generous numbers for a kitchen shelf: 1 to 3 weeks for whole beans at room temperature, 1 to 2 weeks for ground coffee, and 3 to 4 months for whole beans frozen in a truly airtight container. It also advises grinding only what you need immediately before brewing.
How to grind whole bean coffee
Match the grind to the brewer. Wikipedia says methods that keep coffee in contact with hot water longer need a coarser grind. The NCA's guides give two reference points:
- French press: coarse, like rock salt.
- Drip: medium, like kosher salt.
Use a burr grinder if you can. Wikipedia describes burr grinders crushing beans between two revolving abrasive surfaces with little frictional heating, while blade grinders produce pieces of widely varying size. Even pieces brew evenly.
